Vegan Cajun Pasta


Here's another one for my pasta lovers out there! Though I have featured dozens of pasta recipes, this one is most definitely a winner. This Cajun Pasta is juicy and bursting with flavor. The cajun/creole seasoning is the key to amping up the creamy cheese sauce. It's the comfort on a plate you never knew you needed.


Feel free to use any pasta of choice; I always have some type of pasta in my pantry and used what I had on hand. With the seasonings it's all to taste. I always season and adjust to my personal preference; if you aren't new here then you already know I'm all about cooking to please my stomach and won't let any measuring utensils tell me what to do! However; if you aren't sure where to start, go with 1-2 tsp of each spice and simply go up from there.


What you need:


Oil for Frying

1/2 Box Cooked Pasta

2 Bell Peppers, Sliced

1/2 Onion Chopped (White)

1 Can Coconut Milk (Thick part on top of can)

1/2-3/4 Bag Vegan Mozzarella Cheese

1 Bag Gardein Chicken Breasts, Sliced into Strips

1 Pack Field Roast Sausages, Sliced

Seasonings (all to taste):

Salt & Pepper

Cayenne Pepper

Cajun & Creole Seasoning

Chili Powder


Lets Do This:


Prepare you Pasta according to package instructions and set aside. Preheat your skillet over med-high heat with some Cooking Oil. Cook Onions until slightly translucent and then add in the Bell Peppers. Cook until almost soft and then add in your Vegan Chicken Strips. Cook 5-10 more minutes, season, and remove from heat.


In a new skillet heat additional oil over med-high heat. Add in your Vegan Sausage and cook until they begin to brown. Season with Salt & Pepper. Add your Vegan Chicken, Peppers, and Onion into the skillet with the browned Sausage. Once well combined and all ingredients are heated throughout add in your Coconut Milk. Scoop off the thickest part of the can. Stir until the milk has melted down and begins to let off steam.


Add in your Vegan Cheese. Stir constantly until all the Cheese is melted and the sauce is creamy. Add additional seasonings here if needed.


Garnish & enjoy!
