Garlic Parmesan Cauliflower Wings

Garlic Parmesan will forever be a top tier choice when it comes to wing sauce. These garlic parmesan cauliflower wings are fried to perfection; they're then tossed in a delicious buttery sauce that's been reduced with freshly chopped garlic, grated vegan parmesan, and fresh parsley. Tossing the cauliflower in the sauce as soon as they come out of the oil helps keep the wings slightly crisp on the outside; the inside is completely tender and has a ton of flavor. Seasoning both your flour mixture and your egg wash helps the flavor really come through.

What you need:
For the Wings:
1 Head Cauliflower, washed and separated
3 Servings Vegan Egg Substitute
1 Cup All Purpose Flour
3 TBSP Cornstarch
Sea Salt
Black Pepper
Cayenne or Cajun Seasoning
Chili Powder
Garlic Salt
Onion Powder
For the Sauce:
1/2 Stick Vegan Butter
3-4 Cloves Garlic, Minced
Handful Chopped Parsley, Fresh
1/3-1/2 Cup Parmesan Cheese, Grated
Sea Salt
Pepper
Garlic Powder
Tips:
If you're using a powdered egg substitute, double the amount if water required. This prevents the coating from being too stiff. You still want it to have a little thickness, but want it to be thin enough to evenly coat each piece.
Allow a bit of your egg wash to cake up in your flour mixture. This creates crinkles in the breading and gives the wings an authentic boneless wing appearance.
Season your flour and cornstarch mixture until you can visibly see the spices.
Season your egg wash! We want flavor in every layer.
Ensure your oil is hot before frying. I like to test with a sprinkle of flour or a drop of water. Sprinkle it in the oil and when it sizzles the oil is ready.

Method:
Combine your dry ingredients in a large bowl and prepare your vegan egg wash. Season your flour mixture and your egg wash. Dip each piece of cauliflower in the egg wash and then the flour mixture until they are evenly coated.
Heat some oil in a large skillet on medium high heat. Fry your cauliflower until golden brown on each side, make sure the oil is well heated before adding to the skillet.
While the cauliflower is frying, heat up another skillet or pot and begin to melt down your butter. Once the butter has melted and begins to bubble a bit add in your garlic. Cook down the garlic until softened and fragrant. Season. Add in most of your parsley, reserving a bit for garnish. Add in most of the parmesan cheese, reserving a tsp or so for topping. Reduce the heat to low until the wings are golden brown and ready to go,
Place the fried cauliflower in a large bowl and toss in the finished sauce. Top with additional cheese and parsley. Serve and enjoy!
