Perfect Chocolate Chip Cookies


Warm chocolate chip cookies and a glass of cold milk take me back to a time when life was a bit less chaotic and adulting wasn't on the list of things to do. They're that perfect little treat that always seem to be gone just a tad bit too soon; leaving behind yummy chocolate coated finger tips that you can't help to indulge with a lick...or two.

These Vegan Chocolate Chip Cookies will send you off on that little retreat of pre-adult life we all have in our minds...just make sure you remember one of our most important childhood lessons while you're off reminiscing of simpler times: sharing is caring!!

What you need:

4 oz plant based butter

2 oz granulated sugar

3 oz brown sugar

1.25 oz vegan egg

generous splash of vanilla extract

dash of salt

5 oz ap flour

1/4 tsp baking soda

1/4-1/2 Cup Plant Based Chocolate Chips

Let's get started:

Combine dry ingredients and set aside. Whip together butter and sugar with a mixer using a paddle attachment until well combined. Add egg 1/2 at a time. Add vanilla. Be sure to scrape down the sides of your mixing bowl so that everything is well incorporated. While the mixer is going start to pour in your flour and allow to mix until combined - don't forget to scrape down your sides again when needed!

Once you have your base ready fold in your chocolate chips by hand with a large spoon or flat paddle spatula. You can add as much or as little chocolate chips as you like, but, IMO the more the merrier!

Bake in a preheated oven at 350 degrees F. for 8-10 minutes until golden. Allow to cool on a wire rack (if you're patient enough) and enjoy!!
