Spicy Cajun Rice

This recipe is a plant based cross between Dirty Rice and Jambalaya. Its spicy, satisfying, and delicious. The heat comes from a touch of Cayenne; as well as opting for Rotel as opposed to regular old Crushed Tomatoes. The Tofurky Sausage has an amazing texture and already comes nice and seasoned.
The entire dish is full of heat and flavor; it was definitely a hit in my house!
What You Need:
1 Pack Tofurky Italian Sausage, Sliced
1/2 Pack Vegan Bacon, Diced (I use Sweet Earth)
2 Bell Peppers, Sliced
1/2 White or Yellow Onion, Diced
2-3 Cloves Garlic, Minced
1 Cup Uncooked Rice
2 Cups Vegetable Broth
2 Stalks Celery, Sliced
1 Can Original Rotel
Oil for Frying
Salt & Pepper to Taste
1-2 TSP Cayenne Pepper
Generous amount of Cajun Seasoning to Taste
Lets Do It:
Heat some Oil in a large pot and add in Bacon. Allow to get slightly crisp, then add in Sausage. Cook until light brown. Remove from heat.
Add a little more Oil in the same pot and add in your Onion. Toss until almost translucent and add in Garlic. Cook until fragrant. Add in Celery and Bell Pepper. Cook until tender. Add in Rotel.
Cook until well combined and add seasoning. Toss and add back in the Bacon and Sausage. Stir in Broth and Rice. Cover and bring to a boil. Remove lid and reduce to a simmer.
Cook 20-25 minutes until moisture cooks out.
