Chick'n Fried Rice


This Chick'n Fried rice is simply delicious. It will give you all of the Benihana vibes from the comfort of your own home. The Garlic Butter alone will have you licking your lips and asking for more; it's the key to elevating the dish from Chinese Takeout to Fine Asian Cuisine.


The Just Egg scrambles up perfectly and really gives us a "realistic" fried rice feel; and, the Sweet Earth Mindful Chick'n was the perfect chicken alternative for this recipe. I highly recommend 10/10.


What You Need:


2 Cups Cooked Rice of Choice, Refrigerated Overnight (I use long grain)

2 Large Carrots, Diced

1 White Onion, Diced

1 Bunch Green Onions, Diced

1/4-1/2 Cup Just Egg

2 Packs Sweet Earth Mindful Chickn

Safflower Oil for Frying

Sea Salt & Pepper to Taste

Soy Sauce to Taste


Garlic Butter:

1 Stick Plant Butter

2-3 Cloves Garlic, Minced

Juice from 1/2 Lemon

2 TSP Soy Sauce


Lets Do This:


Prepare your Garlic Butter. Place a room temperature stick of Plant Butter into a bowl. Add Garlic, Lemon Juice, and Soy Sauce. Combine well.


Heat 1-2 TSP of the Garlic Butter in a skillet. Cook your Carrots and Onions. When they are fairly soft, add in Green Onion. Cook until soft. Remove from heat and set aside.


Add a bit of Safflower Oil back into the Skillet. Cook the Chickn until brown. Season with Salt and Pepper. Add in 1-2 TSP Garlic Butter and toss until all pieces are coated. Remove from heat and set aside.


Add in 1-2 TSP Garlic Butter into the same skillet. Scramble Just Egg. You can add as much egg as you like in your fried rice. Season with a bit of Sea Salt. Remove from heat and set aside.


Heat up a large skillet or Wok. Add in a bit of Safflower Oil. Once Oil is heated add in your Rice. Break up the rice as it has likely stuck together overnight and cook until softened. It's important to use day old Rice because fresh Rice will turn mushy. Once Rice has softened add in the remaining Garlic Butter and toss until all of the Rice is coated.


Add back in your Veggies, Chickn, and Egg. Season generously with Salt and Pepper. Add in Soy Sauce to taste. Garnish with Green Onion. Can squeeze a bit of Lemon Juice on top.
