Chickpea Tuna Sandwich

I've always loved a good Tuna Salad Sandwich. I love it simple; some soft thick slices of bread, a few slices of tomato, and some crisp romaine. This recipe brings me back to my broke college days that were filled with $5 Foot Long Tuna Subs from Subway and Totally Tuna Sandwiches from Jimmy John's (which were always delivered at the speed of lightning no matter where I was on campus).
Though my memories are filled with Tuna scented college libraries and dorms this recipe is also completely kid friendly. I love to enjoy this Chickpea Tuna Salad simply with Saltine Crackers or Carrot Sticks; it makes for a great snack day or night. It's also incredibly easy to make.
What You Need:
1 can Chickpeas
1 pack 0.4 oz Seaweed Snacks/Chips 2-3 TBSP Vegan Mayo (I use Follow Your Heart Avocado Oil Vegenaise) 3 Chopped Green Onion Stalks 1 Tsp Garlic Powder 1 Tsp Onion Powder 1 Tsp Accent Seasoning (optional) Salt & Pep to Taste
Let's Do This:
In a food processors or high speed blender process your chickpeas, green onion, and seaweed chips. Add in your mayo 1 TBSP at a time until you reach your desired consistency. Begin adding in your seasonings to taste and pulse down until smooth.
Enjoy right away or place in a fridge a few hours to enjoy cooled.
