Asian Inspired Hot Pot

Asian inspired food is one of my all time favorites. I love noodles, and, just about anything hot & spicy is a win for me. This Asian inspired hot pot is so spicy and fragrant you wouldn't believe it comes together in just under 30 minutes.

Lets get down to business.


Pack of Rice Noodles | 1 TBSP Extra Virgin Olive Oil | 8 OZ Mushroom of Choice | 5-6 cups Vegetable Broth | 1/2 Cup Soy Sauce | 1 TSP Freshly Grated Ginger (Optional) | 2 TSP Hot Chili Sauce | 2 Cloves Sliced Garlic and/or 4 Sliced Scallions | 2 Cups Sliced Carrots | 8-10 Snap Peas, Sliced in Half


Prepare noodles according to package instructions, drain, and cut into 3-5 inch lengths.

Heat oil in a large sauce pan over medium heat and saute mushrooms for 2-3 minutes. Add in broth, soy sauce, ginger, and chili sauce. Bring to a boil. Add in veggies and simmer until tender.

Place noodles in a bowl and pour over soup,
