Cauliflower Boneless Wings

Tuesday and Thursday nights at Buffalo Wild Wings pretty much held my broke college diet intact. Nothing like half priced wings to soothe the young broke soul. Now that I'm transitioning, I still need a way to get my wing fix. These Cauliflower wings completely hit the spot, and, they're pretty inexpensive to make considering many of the ingredients you need are probably in your kitchen right now.

The breading has just the right amount of spice and can go with just about any dipping sauce. Serve with your favorite fries or all on their own. Lets get saucy.

1 Head Cauliflower | 1/2 Cup Almond or Soy Milk | 1/2 Cup Water | 1 Cup All Purpose or Whole Wheat Flour | 1 TSP Chili Powder | 1 TSP Garlic Powder | 1/2 TSP Crushed Red Pepper Flake | 1 TSP Parsley | Dash of Salt | 1 TSP Pepper | 1 TBSP Melted Vegan Butter | 1-2 Cups Favorite Wing/Dipping Sauce (I chose Sweet & Sour)

Pre-heat oven to 400 degrees. Break down cauliflower into wing sized chunks. Combine wet ingredients in a large mixing bowl and whisk. Begin to whisk in spices and flour until well combined.

Grease a large baking sheet to prevent sticking. Dip your cauliflower wings into the batter one by one, shaking off any excess batter before lining your greased baking sheet.

Bake for 20 - 25 minutes until golden brown. While baking, pour your wing sauce into a large bowl.

Remove the wings from the baking sheet and toss them in your chosen sauce. Once coated, return them to the baking sheet and bake an additional 15 - 20 minutes. Serve & enjoy!
